– rice flour –  tapioca starch –  eggs –  spring onions – carrots – daikon or green papaya – white vinegar – sugar

Whisk rice flour, tapioca starch, water, vegetable oil & salt. Simmer  while stirring. You can also microwave them.

Grease two 6-inch pans with oil & divide batter into each pan. Steam for 20 mins. Once  done, let it cool.

When ready to eat, cut the rice flour cakes into cubes or rectangles. Season the rice cake cubes with soy sauce.

In a pan, over medium-high heat, add oil, & 1 cup of rice flour cakes. Fry them for 2-3 mins, until lightly golden & crispy.

Crack 2 eggs on top. Add scallions. Lightly move the eggs around so that they can cook evenly.

Garnish the rice flour cakes with scallions & serve it with a side of pickled carrots, daikon & dipping sauce.
