This Chinese broccoli stir fry is tossed in a savory oyster sauce and garlic mixture that brings out the best in the slightly bitter, leafy greens. Prep the gai lan: Rinse and trim the Chinese broccoli. If the stalks are thick, slice them lengthwise to help them cook evenly.
(Optional) Blanch: For brighter color and softer texture, blanch the gai lan in boiling water for 1–2 minutes, then drain and set aside. You can skip this if you’re short on time.
