Air Fryer Salmon Bites
These air fryer salmon bites are one of those recipes I make when I want something fast but still really satisfying. Crispy on the outside, tender in the middle, and packed with savory flavor, they come together in under 15 minutes and somehow feel way more exciting than they should for the effort involved.

If you like salmon but don’t always feel like committing to a full fillet, this is the answer. Cutting the salmon into bite-sized pieces means more surface area, more flavor, and quicker cooking. Add a simple soy-sesame marinade and a creamy spicy sauce on the side, and suddenly you’ve got a dinner that works for rice bowls, salads, noodles—or straight off the tray if we’re being honest.
This is also one of my favorite ways to introduce salmon to kids or anyone who’s on the fence. The bites cook evenly, stay juicy, and don’t have that “overcooked fish” issue that turns people off.
Why Salmon Bites Work So Well in the Air Fryer
Salmon is naturally rich, so it doesn’t need much help. The air fryer crisps the edges quickly while keeping the inside tender, especially when the pieces are small and evenly sized.

About That Spicy Mayo Sauce
This sauce is optional, but highly recommended.
Kewpie mayo brings richness, the rice vinegar keeps it from feeling heavy, and the sriracha adds just enough heat without overpowering the salmon. I usually drizzle it lightly over the bites or serve it on the side so everyone can control their own spice level.

It also works really well as a dressing for rice bowls or salads—similar in spirit to the sauces I use in Japanese sesame dressing or other bowl-style meals.
How to Make These
Once the salmon is cubed and patted dry, it only needs a quick toss in the marinade. Five minutes is plenty—any longer and the salt can start pulling out moisture.

The key when air frying is space. Lay the salmon bites in a single layer and don’t crowd them. If your basket is small, cook in batches. You’ll get better browning and more even cooking that way.

They’re usually done in about 6–8 minutes at 400°F, flipping once halfway through. You’re looking for lightly crisp edges and a tender center. If you have a thermometer handy, salmon is perfect right around 125–130°F for medium.

Ingredients
- 1 pound salmon, boneless and skinless

- 1-2 teaspoons soy sauce, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½-1 teaspoon salt, to taste
- ½-1 teaspoon pepper, to taste
For the Sauce
- ¼ cup Japanese Kewpie mayonnaise
- 1 teaspoon rice vinegar
- 2 teaspoons sriracha, to taste
Instructions
- Prep the Marinade: In a mixing bowl, combine soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Stir well and let the marinade sit for a minute to thicken slightly into a thin paste.
- Cube the Salmon: Pat the salmon dry and cut it into bite-sized cubes. Toss the cubes in the marinade and let them sit for 5 minutes.
- Air Fry: Preheat your air fryer to 400°F. Arrange the salmon bites in a single layer in the air fryer basket, leaving space between pieces for even cooking. If needed, cook in batches to avoid overcrowding. Air fry for 6-8 minutes, flipping halfway through, until they’re golden and crispy.
